    Raise old batten up so it is level with your new batten and place packing between it and the rafter. Plastic shims will do for packing.

    Depending on what product you use that price might actually be cheap. You will need about 75kg of sealant for your 50m2 roof using a one coat system and that could cost anywhere from £600 upwards for a reasonable product. Scaffolding/handrailing could also add to the cost.

    That looks like MDF and is not ideal for tiling especially in a kitchen which is liable to humidity and water damage. You should really rip the lot up and replace with Ply or proper tile backer boards.
