Advice on removing step in internal wall finish

Where our kitchen extension joins the existing kitchen there is a step formed beause the new walls have to have insulation in them as well as a clear cavity.
I have removed the existing browning and plaster from the kitchen wall (Rather too easily as it flaked off!) Leaving a step of approx 1/2" compare to the new wall..

The plan is to plasterboard both the existing and new walls with don'n'dab and then get a plasterer to skim over it afterwards.

What is the easiest way to build up the old wall to match the new, could I apply 12.5mm plasterboard with don'n'dab and then screw another 12.5mm plasterboard on top after?

dot'n'dab a 3/8 (9.5mm) board to the recessed side, as this thickness board plus adhesive will give you about the right amount of make-up.

then simply dab across this new surface, in other words double-dab.
