I am about to rewire the Central Heating & Alarm, they are currently connected to the ringmain via 3 Amp fused spurs. What size cable and circuit breakers must I use when I connect them directly from the consumer unit?

You still need to use a fused spur at the cent heat and alarm (unswitched for alarm), but, yep, use 1mm cable and 6amp breaker.

If both on the same circuit, I would use 2.5 and 20amp breaker.

I intend to wire the central heating and alarm seperately to the consumer unit. Do I need to use 2.5 mm off a 6 amp circuit breaker?
 
I would use 6A unless your Cu is MK or other mfr that uses 3A breakers - then I would use 3A for each.

but one day you may change the mcb, so if you put in 2.5 cable you can
