My bathroom has a false plastic ceiling. 1 panel has been taken down today to reveal a previous fake ceiling (plasterboard) and above that is the original ceiling which is quite damaged.

Is it possible to repair/re-install the original height ceiling or is a false ceiling the only way to go?

yes it is possible to re instate the original ceiling, provided the timber members aren't fire damaged, rotten or otherwise.
 
Rip the lot down (you'll enjoy it) and get a plasterer to come and put up a nice new plasterboard ceiling, skimmed afterwards then painted with a quality white bathroom paint. Better still, before the plasterer, put in 12V halogen downlighters and enjoy the brilliant white light, which will make your chrome sparkle and your water shimmer.

I agree with RigidRaider, get a price to remove the lot back to the original wood and plaster board/skim it.
