Earthing a metal pendant with 2 cables..

I have 2 cables coming into my bathroom light which is metallic

so there should be:

2 black wire
2 red wire
2 earth wire

ONE of the earth wires is snapped and not enough length in cable to re - do (as previous post i may extend it if i can get to it)

If i just connect one of the earth wires (as opposed to 2) is this suffice to provide an earth, or is it essential that both earth wires from both cables, are connected to the earth terminal?

No you must connect all the earths together to provide earth continuity to everywhere on the radial. Extending the broken wire to achieve this is permissible.
 
so If I need to extend the cable using a cable connector, the 2 earth wires will go into one side of the connector, do I need 2 earth cables coming out of the other side of the connector or will 1 length of earth be suitable?

Ie, one side will have 2 earth cables and the other side will have 1, of which will actually be wired in to the earth terminal?

Yes. 3 earth wires together . 2 in and one out to the light fitting
