Filling gaps between wooden joists and brick on 1st floor

I'm in the process of refurbing the upstairs and one of the things I need to do is improve sound proofing on the party wall (50s semi). I can hear almost any level of conversation from the neighbours. However, before I start thickening the wall I need to plug a few gaps.

Having taken up the floorboards I can see large gaps between the joists and the brick pockets (presumably allowing sound in from the cavity), as well as between certain bricks. I want to fill these gaps but not sure what to use, I'm worried I could damage or rot the joists which don't seem to have any sort of protection around them. Can anyone suggest?
