the trouble you have with those hinges fully open you have the full thickness off the gate in the opening
iff you use hoop and band hinges you can put the pivot point half way across the face off the post and the gate will be out off the way when open

Hook and band hinges you think
Like these-

What do you mean stepped back?

these are current ones -

you would be better with one that isnt cranked as the cranked will move the gate towards the opening when fully openend by the amount the crank is set back

By stepped back he means the closer you put the hook part on the post towards the rendered wall the less gate there will be sticking out when fully open

nail another piece of wood on the edge of the gate to fill the gap. Can't make it look any worse than it is.

So change hinges to hook and band and screw them in into middle of post(see pix)

? (Post will be bolted in and touching the corner of garage wall (wall facing us on right). Should swing all around and have a hook hold it open on wall on right

assuming the gate is 44mm ish and the post is 100 ish the pivot point will need to be about 2/3 back as the loop will be around 30mm ish so half that is 15mm gate is 44 so a total 60mm to the centre off the pin so about 20mm from the wall if that makes sense
what may restrict more is a say sulfolk latch may exceed 100mm added to the door but will be way from the closing post on the other wall so more overall room

you can't use band hinges over lap board, it will look crap with the gaps. Your original hinges will be fine, just recess the pin bit into the post
its one heck off a narrow opening to loose 40-50mm from and indoor hinges will tend to "bark" as they rust and go out off line

yes you're correct, the band hinge could allow a bigger opening (10% more). but the band over the lapped panels would be cringe worthy. But as others have pointed out the gate is not going to win any awards on aesthetics. So functionality would at least be something to aim for.

yes indeed i can see the tears off dismay as the black streaks from point off contact where the steel hinge meets the timber now highlighted by the white paint ----
if a smaller opening is fine and they can live with it then brilliant but in general its all a compromise where form over function with what you have dictates what you can achieve

Might be better off with bands like this if you can find suitable size

I can get them built in under lap board, like current hinges. Do this or stick with current ones?

Router it out like a door hinge? So knuckles are in recess? Depth of knuckles or hinge?

Looking at picture hinge, I reckon it will swing 120 degrees
