Plastering ceilings

I've plastered small walls and sections of a wall and I seem to get a reasonable finish.
Now I am looking to plaster a rather large ceiling 14ft by 12ft.
Can anybody give me some tips please?
Do you put the first coat on all the ceiling before applying the second coat or do you apply it sections;

Do half the ceiling with first coat
Do second the second on first half the ceiling
Do first coat on the next half of the ceiling
Smooth the first half the ceiling
Apply second coat on the second half the ceiling

etc etc

put the whole ceiling on in one, put your ruffing coat on first, lay it down with your second coat and then flatten and trowel. if your right handed start from your left and work to the right and opposite if your a lefty. if you do it the other way it will start setting at different times.
