I would like to replace previous flush door contacts with reed type due to extention.

Previous contacts only had 2 wires connected no tamper. Can I just connect the two wires to the reed and ignore the tamper connections?

What is the best way to attach these to aluminium doors?

An HSS drill will let you fix the contacts to the door, and you just need a couple of metal screws. The tamper wires just need twisting together and taping up if there's no spare screw in the contacts.

Cheers.

Situation is the other way around. There are no existing tamper cables, just two cables for the old contact so just checking that the reed's would work with just the 2 cables.

Nope sorry; I find most seem to be okay, and are cheap and easy to replace if necessary.
