basically how can i tell if the damp has ruined the plaster in an old house?

basically the walls are very spongy and bulging in a lot of places

but is this the plaster or character?

could it be some thing else that you get in older houses its dated 1820

most likely the whole wall is damp as there is probably no damp course like the previous post says the plaster is dead for sure my house was built 1925 and i have had to replaster every room!

but what i'm really after is whether the plaster on these walls, if origional, the same as the plaster used today. or is it likely to be some cow dung / straw mix.
