A two plate rose consists of a switched live terminal and a neutral terminal and usually an earth terminal.

You would normally just use a three plate rose for all the various applications.
Two plate wiring is where you only have sw live, neutral and earth at the rose.
eg
Junction box wiring, loop in at the switch method, conduit method.
Three plate wiring is the common loop-in at the rose method, where at the rose you have a feed in cable, a switch cable and usually a cable to feed the next room.
If you use a three plate rose for a two plate method then you would leave the middle terminal (loop) empty.
