From my experience with oak doors, I would recommend "Dulux Naked Wood". It brings out the grain of oak beautifully but without darkening it too much. It's a 2 part system (preservative basecoat then top coat) and isn't cheap but it's the only thing I would recommend for oak.

If the splashbacks are thick enough to take it (and you have some offcuts of iroko) I'd be tempted to buy a plug cutter and make plugs to hide the screws - sets of 4 are only around 4 or 5 quid.
This would give you a nicer finish if you line up the grain.

Mass produced doors (XL Joinery, LPD etc) will only reduce by a maximum of 6-10mm per edge without invalidating the guarantee so that's not really an option. The cost of a bespoke door would come as a bit of a shock...
