What's the best mortar to use on a 1900 ish red brick mid terrace?

Hi, even though large swathes of the UK are victorian built houses. I'm finding it hard to find suitable lime mortar at B&Q, Wickes etc for my victorian mid terrace to do some pointing. Why don't the major chains stock lime mortar? Do people not both and just use portland cement mixed mortar...

Will all this cement need removing? the exposed holes are yes about 100mm deep . Is that an issue? The vent near the fireplace just goes straight outside it seems. What is the material used here? does this not sit well with the 1900's bricks?
