Chimney Breast Removal - Regarding Joists

I am in the process of getting a builder to remove my chimney breast on ground floor, The middle floor chimney breast has already been removed years ago by previous owner and the stack on top is supported.

Regarding the ground floor the biggest issue I see is the joists rest on the front of the chimney breast so how and can this be sorted ? I have also had no quotes yet so any indication of what I am looking at would be great.

bare in mind I can plaster the wall after and sort the floor myself.

Put trimmer joist across between the two full length joists to pick up the short joists.

Double up the trimmer.
