He cannot work on Hells Kitchen because he is not CORGI registered with the Commercial Catering element.

There is actually an extreme shortage of people with this qualification. I met someone who worked for a firm which specialised in this but they had decided only to do installation work.

The problem is that maintenance involves working amongst the cockroaches in smelly stale fat 10 mm thick covering everything.

Its not helped by the fact that catering wages are about £5 per hour and restaurant owners find it hard to come to terms with charges of £30-£60 per hour for cooker maintenance.
