They work just like folding wedges and the teeth lock them together once the timber is tightened, then just hammer a sharp scraper through the excess poking out and seal or architrave over
So what is the purpose of this, or the folding wedges you mention? Why not simply place the frame againest the wall and secure directly to the wall?
Is it used where the wall is not completely vertical and you want the frame to be vertical, or what is their purpose?

So if I find that the brick wall is completely vertical then I shouldn't need these?
Correct but walls are never plumb or don't have bricks poking out
