How do these horseshoe packers work when affixing an external door frame? What precisely is their purpose? Do they remain behind the timber, or are they removed? Thanks.

They work just like folding wedges and the teeth lock them together once the timber is tightened, then just hammer a sharp scraper through the excess poking out and seal or architrave over

So what is the purpose of this, or the folding wedges you mention? Why not simply place the frame againest the wall and secure directly to the wall?

Is it used where the wall is not completely vertical and you want the frame to be vertical, or what is their purpose?
