MAIN MERSEY SUPER hot water gas heater

I do the catering at my local rugby club. The kitchen has a Main Mersey wall mounted water heater. I don't know how old - but I think it's old.

Pilot light works ok, but is a pig to light if it goes out. For some reason, it provides hot water for about 5 seconds, then goes cold and gradually warms up to a luke warm temperature. The flame seems to work ok when hot tap opened, but gives not very warm water.

Any ideas with this please. If its no good, what boiler would be recommended? I imagine we get thru between 40 and 60 gallons of "hot" water a day each weekend. I wouldnt think the club would like to spend too much money either.

Help much appreciated.

It needs a new diaphragm existing one is stretched and not allowing the gas valve to open enough to get hot water ten quid part half hour job max an hour.
Also pilot needs cleaning
