Plasterboard over wood?

I recently had a room skimmed that had a load of wood below and at the sides of a bay window. I removed all the wood and strapped and boarded it. Strapping the wall was a real pain to get level due to the nature of the walls and window frame.

I have to do the same in another room that has a recessed window and I was wondering if I could just overboard the wood with 9.5mm plasterboard before skimming? Is there a reason this shouldn't be done?

As log as the board can be fixed every 8-10 inches with p/b screws does not move under moderate pressure and doesn't stick out past the wall it's attached to by more than a few mm there is no problem at all.
