whats the best mix for pointing brickwork ive heard all different sand cement mixes from 2:1 up to 7:1 also should i use a plastasiser.

There isn't one mix for pointing that covers all situations. A 100 year old house with soft porous bricks would require something different to a modern house in an exposed position on the coast for example. Generally you are looking for a similar mix to the original, unless it was defective and failed early.
 
Best mix for pointing for most applications is the same as traditional compo of 3:1 sand and cement. Yes I would also recommend plastizer as is prolongs the time you have to work with the mortar. It also most importantly helps it conform to building regulations.
