I'm about to tile a shower enclosure, do I tile first then put the tray in so the tiles are behind the tray or should I fit the tray then tile so the tiles sit on top of the tray, thanks in advance

How are your walls prepared?
You may consider tanking them first - A good kit here: https://www.screwfix.com/p/mapei-shower-waterproofing-kit/78484
In which case, put in the tray first, the tanking goes next and melds onto the tray, then tile over the top.
But that's only one idea!
The grout and tiles aren't necessarily waterproof, so it's best to rely on a waterproof substrate, such as tanking. The tiles thus lip over the tray and any water that gets past them is caught by the substrate and drips into the tray.
