cheaper water based sealer will often give it that wet look. They also need re-applied frequently.

A good quality impregnator sealer will not leave the stone looking shiney but will set you back a fair few bob.

Dry treat or Lithofin stain-stop are both high quality products. Probably need to wait till summer to apply though as its needs to be warm and dry

Why on earth would you want to seal a natural stone that has been laid externally?

Because you have spent probably thousands on a quality stone patio and if you spill red wine, black coffee or oil/fat on it it could stain it badly to the point of having to replace affected flags. It will also make it much easier to keep clean.
