We have just had a new sink & mixer tap fitted. After the cold tap is turned off & after a few seconds it releases water that is presumable left in the spout. Is there anything we can do about this?

Probably not, unless you can fit some sort of aerator to the outlet. Return the taps to the supplier - they aren't fit for purpose.
