Well the power off problem can be solved, not sure about the simultaneous switching though.
 
I thought about that. Would it not still be possible to simultaneously operate the contactors at the same time?
 
Yes, if someone pulled the non-delayed switch exactly the right amount of time after the delayed one was pulled.

So unlikely though. But it would remove the power restore problem where you could start out with both of them closed.
 
I was thinking of one contactor being normally open and the other normally closed. Then use 2 way pull cords to turn the power to both contactors on or off.
