adding a new light

:cry: How do you connect a new switch/light into a circuit that has normally has one (live) wire running to a switch then to the light and then two black cable leading way?? There seems to be no junction boxes

Are you saying you have a light at one end of the cable, the switch in the middle and the other end?
and in the switch the two blacks are joined?

Your answers to the questions will determine how you should proceed next
 
the first cable appears from origin unknown!, it enters the switch and then exits again, it then enters the light rose and 2 cables exit, one of these cables then seems to go to the next light and the other disappears to who knows where?! All lights seem to follow this pattern and are all wired by single cables rather than the usual twin and earth.

You appear to have a standard ceiling rose with 3 terminal blocks(excluding earth) comprising Switch(2 term)/Live(3term)/Neutral(3term)
I think you have made it clear regarding Switch(two wire) and Neutral(two black wires)
What is not clear is how many wires (red I hope) are in the middle block.
There should be
a. the live in
b. a live to the switch.
c. another live being the feed to the next rose
This would match up with
a the neutral return to fuse box from rose
b.the neutral return to fuse box from the next light via this rose
Basically you can take a live from any permanent live ie 'live' side of switch or' live' block in ceiling rose or fit a junction box in a cable which will give both a 'live' and 'neutral'
