advice please for laying natural slate tiles

Ok, I'm almost ready to start laying the slate tiles so is it best to open all the packs first & go through them & try and group them in same thickness, then wipe them all down ( they all seem a bit dirty ) then seal them, then lay them, seal again , grout, do they then need sealing again after wiping them down after grouting too?
