Apple trees advice

Hello All

Fairly recently moved into a new house (old house but new to us). The garden is well established with mature shrubs, bushes etc. I found out from the neighbours that until recently the garden had an old eating apple tree but the previous occupiers saw fit to chop it down. I would like to plant another one but would like advice on when to plant, location in the garden, best varieties, how to establish it etc. The garden is quite large and south facing so therefore gets plenty of sun (when we get any) and the soil is a bit sandy. If possible I would like to get fruit as soon as possible.

Any advice much appreciated.
