Measuring up in my house, and most internal doors are about 1/4" shy of 82" x 34" with others being, 82" x 31 3/4"

Are these standard sizes? There bigger than most I've seen and obviously very old, but are they a readilly available size?

If I make sure to buy solid doors can I cut as much off as I want? ie if I could get 5 doors at 82x34, would it be ok to cut off 1 1/4" each side to fit into the thinner frames?

I'll be getting a joiner to fit hinges/handles and hang the doors, but just wanting to know what the options are at the moment

The amount you cut the door size down to would very much rely on the quality of the door, a solid wood door you would have little problems with, but the hollow egg box types you would be limit to the excess you can remove, as the supporting framework is quite often only around 30mm-40mm.
