attaching head plates to ceiling joists

can anyone explain the easiest way off putting up a head plate for a timber frame (for plasterboard work) to the joists i have running in my garage ceiling?
When putting up a timber frame, is it best to put up the head plate and then sole plate and then struts or best to make frame and then put up?

we usually fix the sole plate first, using a straightish piece of timber, although you can straighten out with decent fixings and a little elbow grease.

then find a nice straight upright and mark the verticals on the wall, continuing the marks up to and onto the ceiling.

you now have marks at each end of the ceiling onto which to fit the header plate. seek out a straight timber for this task, as this will dictate the line of the wall and will be difficult to straighten.

then fill in. ;)
