Baxi Combi 80 Eco afety Thrmo triggering

I'm looking for some help.

I have a Baxi Combi 80 Eco boiler that cuts out as a result of the safety thermostat triggering. The thermostat is fixed to the flow pipe and is reset by pressing the little plastic button located between the electrical terminals of the thermostat. It's a big nuisance as the boiler cover has to removed every time.

The thermostat seems to trigger randomly, one week it triggered 3 or 4 times, other times it has been moths and months between triggers and I don't remember it triggering more in the winter than the summer either.

I can't force it to cut out either, e.g. running the hw tap very slow on full temp, or running the washing machine along with the shower etc, etc....tried all combo's but nothing seems to do it, which is a pain as it makes the problem harder to locate.

Has anybody got any ideas as to possible causes ?

To properly identify the fault it needs the operating temperatures to be monitored.

Also the operating temperature of the o/h stat to be measured.

I would be suspecting an intermittent sensor or even a sticking gas valve. I would be likely to measure while thermally cycling the sendors.

Intermittent faults are often somewhat difficult to find quickly.
