Buying a red Japanese acer tree

were after a fairly tall (8ft or taller) red Japanese acer tree, we can’t find any local to us in garden centres, would ordering a tree that size/cost online be a bit of a risk?

Kind of worried about spending £200/£300+ and it arriving and being not exactly how we expect

You won't get a specimen Acer for £200/300 you're looking at much more. Well over a grand. Search for specimen Acers UK, there are a few sellers in the UK, however you may have to be prepared to import it. Sorry, what you're after isn't cheap.
 
Grow your own! Our one, pot grown to about 5 ft, died last year at the ripe old age of 31 years old. New one purchased just over a month ago and potted up - you can see the new growth so far. I’m hoping to outlive that one too!

This is ours, was shortened by about 6ft last year.

Ours has got a way to go then! I did suggest to the wife about planting one in our front garden - we must have the soil for it as a few others have them round here - but she wasn’t interested. Same response to a monkey puzzle tree. :(
 
Won't thrive if it's not fairly well protected, acers are edge of woodland trees, don't do too well in exposed areas.

I can understand your wife's reticence regarding a monkey puzzle tree (Chilean pine... I think) Bit of an acquired 1970's taste!
