We moved into a house with alarm system. Never used it as have no manual. Now re plastering some walls and need to remove the sensor which is on the wall. Can this be done?

Do you have user code number ?

If you take lid off sensors code will stop sound. Each time you trigger tamper you will need to use code to silence fault.
 
We have a 4 digit code , so if we take lid off sensors and alarm goes off, then tap in code. Will this then stop the alarm?

If installed correctly then each device will be connected to a tamper circuit. When you take the cover off a detector that should trigger the internal sounder. Entering the user code should stop the sound,this may happen each time you take a cover off a sensor.
Take cover off pir,then enter code .Don't press # at this point.
Remove sensor pcb to access screws holding pir on wall.Re build pir by putting lid back on a now press #. Leave pir hanging on wire while you plaster. You could cover pir's with cling film while plastering to keep then clean.Do this for each pir you need moving.
