Capping off cables

I have removed an old wired alarm unit, I want to put the cables into the void in ceiling, is it safe to isolate the circuit and attach junction boxes to the cables then push up into the void?

Yes, once isolated and removed from a power source connect all the conductors up so it can not become energised

I don't have a star. But I do have a clicky "Rate" and it's under there.
 
As it is all ELV stuff and isolated you don’t need junction boxes or anything. Just cut the ends off.

There are all sorts of things I would ideally like to change, if I could (like the fact that to get to 'underline' one has to first click on 'More') but, at present, the 'Settings' option of our 'Preferences' appears to be 'greyed out' - I wonder if that is going to change?

Yes, the op mentions 'cables', which suggests that as long as the 230v supply feed is safely and correctly terminated, any 'alarm cables' leaving the alarm panel can presumably be left or cut off.
