Central Heating Wiring

Not done much to Central heating systems before, but could someone explain the difference between wiring for Y plan, S Plan C Plan etc etc.

Is it up to me which plan I do, or does it depend on how the plumber has plumbed it??

Most certainly depends on how the plumber plumbs the system.

S-Plan = 2 X 2 Port Zone Valves.
Y-Plan = 1 X 3 Port Zone Valve.
