changing ceiling light

I currently have a single pendant, ad i've bought a different light for my living room

Currently, this is how the pendant looks wired in

The light i'm fitting to has the conections just needing L, E, N

Looking at my pendant (currently) i'm assuming the cables that come out of ceiling connect to my new light as follows:

Red goes into L
Black goes into N
The other two wires that look stripped (earth??)

Yes, you are correct.

The earths should have green&yellow sleeving on them.

Most likely a stupid question, but my new light only has 3 terminals, whereas current pendant has 6 i'm assuming both black cables can join into the same N terminal and likewise with the earth?

Yes correct.

Well, yes, six holes (actually there are eight) but only three bits of metal.

Your new connector blocks have two ends - so six holes.
