If a screened cable is earthed at both ends then it becomes a parallel path for any earth currents that flow (faults, leakage etc)
This earth current will set up a magnetic field which can interfere with any of the small signals that are being sent in the cable.
By only earthing at one end stops the possibility of these currents flowing.
