Dot and dab - why?

why would a builder/tiler using dot and dab on bathroom tiles? I Need to install rails etc but worried any pull on the rails will take the tiles off. What is the solution - longer screws?

You fix through the tile into whatever is behind it, ie plasterboard/studs or masonary.
You’d have the same issue whether or not the tiles were dot and dabbed

Laziness or just poor workmanship..

Possibly done due to non straight walls maybe? I know because I saw the dot and dab on the plasterboard.
