Dot & dab board or float & skim?

Probably an age old question, but I need to choose how to have my living room replastered.

Its a 1930's house and the walls are back to bare brick. I reckon id prefer traditional wet plaster, easier to fix radiators etc but the plasterer we had round to quote wanted to dot & dab plaster board the room instead.

He did provide two quotes for our 3m x 3m x 2.8m H room, including ceiling..

Dot & dab £675 all in
Float & skim £800

I realise dot & dab is easier, quicker, faster drying and may add insulation? But I prefer a solid plastered wall for fixing things to. Am I old fashioned or should I stick to my guns?

It's not a good idea to use PB on outside walls. I'm surprised he suggested it. Is he proposing to board out the ceiling or just skim it?
