drywalling

I have woodchip throughout the house and am beginning the painful process of ripping it off and replastering. I was thinking about strutting the outter walls (cavity walls) putting fibreglass insulation and then drywalling them. My question is would I need to remove the woodchip before doing this or can I do it over the top of it? I just wasn't sure if it would change thermal properties of wall causing wood chip to mold or anything like that behind the drywall?

As long as the wall is dry you can batten, insulate and sheet without any problems.
