Earthstone kitchen upstand

We're putting in an Earthstone worktop in the kitchen with their upstands. I take it it is usual to use a sealant between the worktop and upstand, and then also between upstand and wall?

Reason for query is one installer has said its not usual to put sealant between worktop and upstand - but surely all sorts of muck and gunge will get in and..... We did make the distinction between doing the earthstone bonding and using a sealant.

Also would you use sealant between cabinet edges and the wall on the end of runs, and where a larder unit goes up above worktop height, to just help fill/disguise the slight undulations in the wall?

Just had earthstone worktops/upstands fitted. Our fitter put a bead of clear silicone sealant between upstand and worktop which looks fine and is the same as in the showrooms; didn't put any between upstand and wall although this would be preferable but not part of the job. Personal choice as to putting into any gaps between wall and units. Only problem we have is with one of the worktops in particular which gets a lot of daylight is seeing the fine scratches from the scotchbrite pad used to finish the sanding process , even after lots of polishing. Also attempting to polish out a small scratch using the scotchpad as recommended just puts fine scratches instead!
