I have replaced my consumer unit with one having MCBs, and find that the ends of two circuits are too short to connect to the earth and neutral rails. My question therefor is can I extend them within the cu by using connector blocks?

Through crimps applied with a proper ratchet crimper would be much better.
Or if not visually unacceptable, JBs on the wall next to the CU - you can get white rectangular ones which look neater than round ones.
Or use choc-block inside a surface pattress with a blanking plate over the top.
CUs can be crowded and disorganised inside, and it would be good to avoid choc-block just stuffed in there....
