Help needed for my wooden worktop

Hi Guys, this is my first post so hopefully doing it correctly... I have a large amount of small stave solid oak worktop - about 4m x 1m.

It has already had 3 coats of oil - if i gave it a few more coats, would i be able to make a front door out of it or would it still warp with the changes in temperature / moisture?

A clear varnish would give it the hydroscopic protection it needs. Over all faces and edges, some forget that!

Probably warp and would look pants, imo.
Maybe make a couple of coffee tables from it.?
Offcuts make decent chopping boards.
