Kitchen Chimney

We are renovating our old kitchen and have taken off the plaster over an old chimney breast to find a nice old (high) chimney recess behind it.

The thought was that we would keep the chimney open and instead of putting back in a fire & hearth we would use the space for our range (new style not aga) thus removing the need for an extractor above the oven.

I have arranged to get the chimney swept. But I'm assuming that some kind of system (?) wil need to go into the chimney to stop anything falling in my tea???!!!

Advice/websites would be appreciated.

i'm trying to visualize this.

are you just going to leave a high level chimney flue open and in doing so expect it to draw cooking smells, fumes and the like into it? or are you thinking or installing a hood of some description?
 
The idea was just to leave the chimney open - we have had it swept.
