Laying ceramic tiles in kitchen

Right this is another option the wife has come up with. We have just been to a place that sells these largeish floor tiles. I read on another post that i should take up the existing tiles in my kitchen they are square 300mm x 300mm tiles like a rubber material. I can see on the edges the concrete floor underneath.
Should i take up these first?

Ok the next thing is laying these new tiles. Do you start at an end or on a long edge ? what do i need to lay the tiles? any info would be great i have never tiled before but i am a joiner and used to laying laminate flooring etc and used to using a level etc.
Im after some tips etc
