They are rafter collar ties or "collars".
You need a local joiner on site to give advice - there are various structural and safety issues which make advising you on here unsafe.
Maybe others might chip in, and advise you differently?

My general comment is that if they're in the top third of the rafter span they're primarily to stop the ridge coming apart when it's windy etc. They will also have a small effect sag by dividing the rafter span.
However looking at the photo there is also a diagonal which you didn't mention. This is probably a strut to support the centre of the rafter too, although I can't see a purlin.
But in your specific case as Vinn says, you need someone on site to look and work out what's supporting what. Personal I'd be careful you get someone with experience as we've seen some "interesting" work done to structural parts before.

thanks for your help who would i get to look at it as at the moment im using a chair to get over the beam that goes from side to side hahahah there is 2 the one in the photo and one further down

For my money, what you are doing is ducking Blg Regs and the BCO for a DIY loft conversion.
No BCO would have passed what you appear to have done.
No professional joiner has done that work.

There's a possibility that you have weakened the framing of your roof, and that the roof might now begin to spread or sag?
