making sliding doors

I have been looking at doing some work in our utility area for a while now, and had planned to purchase some sliding doors 5 in all on 3 rails so we can have 3 sections open.
Things have changed , and I maybe making the doors myself

The length I'm covering is about 5m - so each of the 5 doors would be around a 1 meter plus overlap wide , although maybe wider, of it works out to have a smaller door somewhere
Height 2.15m

just a square room i'm partitioning off, to have shelves and washing machine, etc behind

the main question is i will be making shaker style doors

1 to 1.5m wide X 2 to 2.15 M high

Do i use
12, 15mm or 18mm MDF
OR
12, 15, 18mm Plywood, structural softwood
OR
some other material and thickness ?

all suggestions/advice welcome

I'll probably get the running hardware from one of the sheds, or online somewhere like sliding-doorstuff.co.uk
