Mounting box in lathe & plaster

Hi I want to change all of my sockets and light switches upstairs. They are surface mounted on lathe and plaster walls. The only way I can think of doing this is possibly with dry lining boxes. Would this work ?

Is all the wiring surface mounted too in mini trunking, or sunk into the walls?

wiring is all in the walls except for one spur which seems to have been added later

Best to check the depth of the lath & plaster, and the thickness range the clamps in the boxes can handle.
