moving stopcock

Bit complicated, but for various reasons need to move a stopcock from one side of room to the other.

My thoughts are to get a big channel dug out in the concrete across the floor, cut into the current pipe before original stopcock and connect to this with 15mm MDPE, running across the floor in the channel to the new point, elbow up and attach new stopcock, after this run a feed to the kitchen sink, then double back along the channel to connect to the pipework that feeds the CWS and bathroom.

Questions are:

1. Does this sound OK?
2. Original pipework before stopcock is 1/2" galvanised, what is the best way to connect to this and also to cut it?
3. would you use MPDE or stick to copper?
4. Anything I have missed here or should be aware off?

Wish it could. The wall its against now is coming down, ad opeing a room up, so need to drop the pipework below floor level at this point, hence new pipes under channeling etc.
