My boiler light keeps going out erratically, it may go out every hour or less then it lasts for several days without any problems. I know a faulty thermocouple can cause pilot light problems but could it do it this erratically? I have noticed the days we have problems are windy/breezy days so could this be the reason and if so why and what can I do about it.

Difficult for us to comment without knowing what boiler you have.

These are all meant to be jobs for a competent CORGi engineer who is experienced in dealing with pilot light faults.

Why not call CORGI and check if working on gas is for registered gas installers only.
