Hello,
I'm trying to plumb in an old Blefast sink with imperial drain fitting and a metric sink side-side.

I'm having real trouble finding a reducer/adaptor to let me step down from a 50mm outlet to the 40mm of the rest of the system. I've tried without success various google searches and can't even find a decent outlet in Aberdeenshire.

Please can anyone tell me where I can get such a thing?

When you say "drain fitting" do you mean the waste:

For a Belfast sink they are normally 11/2" BSP thread. There is not, AFAIK, a metric sized waste for a Belfast sink.
A 11/2" waste should be fitted with a 11/2" x 40mm trap and 40mm waste pipe.

If it is a 2" waste (some were, a millenium ago) McAlpine do a 2 x 11/2 reducer:
