Raising Garage Floor - Pallets

I'm gearing up to insulate my garage to make it more useable, but I need to raise the floor. I'll lay a DPM town but have a couple of questions.

1. The back wall of the garage is plastered down to the garage floor level, should I just chip the plaster away until I'm a couple cm above the new floor height? I'm not sure how far I should bring the DPM up this wall...

2. Anyone ever used pallets to raise a garage floor? I'm thinking I could put some loft insulation roll in some of the bigger more sturdy pallets then OSB on top then laminate flooring, as I have good access to free pallets.

Will you be heating the garage? What about the walls/ceiling?
Won't be heating it as it'll still mostly be for storage but will have a bar and games table for occasional use so will have an electric 'wood burner'. Only 1 outside wall I plan to insulate, plus the door, and ceiling is getting insulation and boarded
 
I suppose if you can secure the pallets to avoid squeaking, and get them level, and the depth of the pallets is the required depth to be raised, it could work.
